Ingredients

  • 4 salmon filets (about 1½ lb), skins on
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ cup (116 g) mayonnaise
  • ¼ cup (66 g) Thai sweet chili sauce
  • 1 teaspoon Sriracha (or more to taste)
  • 1 tablespoon honey
  • Chives, chopped for garnish

Instructions

  1. Preheat oven to 400°F. Line a large baking sheet with parchment.
  2. Drizzle salmon with olive oil and rub to coat. In a small bowl, combine paprika, garlic powder, salt, and pepper.
  3. Sprinkle seasoning mixture over the salmon filets.
  4. In another bowl, whisk mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Divide in half (about ½ cup to brush, ½ cup to finish).
  5. Brush the salmon evenly with ½ cup of sauce.
  6. Place filets skin-side down on the sheet, leaving space between pieces.
  7. Bake 8-10 minutes (start checking at 6). Internal temp: 145°F. For crispier tops, broil 1-2 minutes.
  8. Transfer to plates; drizzle with remaining sauce and garnish with chives. Serve warm with rice.
